When a winery cares enough to offer free virtual wine pairing/cooking classes that says so much about them. The PlumpJack Estate Wineries’ are proud of their wines and want to share their expertise with the public.
The owners California Governor Gavin Newsom and composer/philanthropist Gordon Getty opened a wine store (1992) with a mission of creating an approachable environment for people to learn about and purchase wine. The PlumpJack Wineries grew to include restaurants and other properties.
As a restaurant reviewer, I have attended wine and food tastings for 20 years and can say, PlumpJack brings the ultimate selections for your special night. I had the opportunity to watch PlumpJack’s virtual cooking class and was impressed with the chef’s presentation.
PlumpJack- Café Balboa’s Executive Chef Goran Basarov prepared Balboa’s famous Chicken Paillard and this is the first time they allowed anyone to know their recipe. Paillard is a French culinary term referring to a piece of meat or chicken pounded thin, then grilled or sautéed.
CHICKEN PAILLARD INGREDIENTS:
Paired with PlumpJack- 2018 merlot
Chicken Breast, AP (All Purpose) Flour, Panko Bread Crumbs, Eggs, Corn Starch, Kosher Salt, Grated Parmesan, Marsala Wine, Chicken Stock, and LOTS of Butter.
The Paillard Chicken is prepared with the distinctive taste of Marsala Wine as it becomes so crispy, its golden brown color seems to shine. The enticing array of all of the tastes are accented by the grated Parmesan Cheese and the crunchy Panko Bread Crumbs.
Choosing the right wine and ingredients for the Paillard is important and Executive Chef Goran knows wines.
