
Del Frisco’s Double Eagle Steak House ultimate Winemaker Dinner was a
time to discover the essence of luxury, to pamper yourself with the finest foods and wines.
I previously discussed their amazing appetizers but there is so much more.
Executive Chef Fernando Guerrero’s entrees, a lighter, tastier seafood
selection- Seared Jumbo Sea Scallops and Santa Barbara Uni.
I enjoyed the crunchy puffed Quinoa, a perfect combination with both the fruity Turmeric-Lemon Vinaigrette and Smoked Tamari sauces. These enticing flavors awakened the Sea
Scallops and Uni! Searing the Scallops on the outside with a light crust is a delightful
contrast to the tenderness inside.
The Santa Barbara Uni are so fresh, the moment the fishermen bring them to shore a
driver immediately brings the fresh Uni to be processed. Hand-picked Uni males are
chosen for their superior qualities, the best urchins available.
The Sea Scallops and Uni were paired with Plumpjack “Reserve” Chardonnay,
Napa Valley 2017. Taste the wine’s traces of toasted almonds, vanilla, caramel, and
spice. Plumpjack’s Chardonnay grapes offer two Napa Valley vineyards, in
Los Carneros and St. Helena. Carneros’ cooler climate accentuates the lemon zest,
green apple, Bosc pear and creamy, rich fruity texture. The warmer St. Helena site provides
fruity touches of apricot, and melon.
The Second Course, Grilled Australian Lamb Loin, recognized for its tenderness and flavor, was accompanied by taste-tempting treats. I enjoy the crunch of bacon, taste of
cheese, and creaminess of the Parmesan-Bacon White Corn Grits. All this and four more
sides: Spicy Roasted Shallots, the exotic taste of Wild Mushrooms, and Black Olive
Tapenade (paste of olives, onions and spices).
The lamb paired well with Adaption by Odette Cabernet Sauvignon, Napa Valley 2016, with
touches of rainier cherries, currants, elderberries, forest floor and dried herbs.
A second major entrée, Roasted Hickory-Smoked Sea Salt Prime NY Steak was next!
The hickory-smoked flavor and sea salt added zest. The Summer Pole Bean (grows on a
bean pole), with the nutty, sweet Sunchoke vegetable Salad, and Heirloom Tomato Relish.
Both the CADE Estate Cabernet Sauvignon, Howell Mountain 2016, and Odette Estate
Cabernet Sauvignon Stags Leap District, Napa Valley 2016 wines complimented the steak.
With the grand Finale, the Black Forest Gateau desert was filled with luscious fresh
Cherry-Mascarpone cream and accentuated with fresh berries. Every decadent bite was
incredibly pleasing, moments to savor.
The dessert was well matched with Taylor Fladgate 10 year old Tawny Port Douro wine.
