With only 10 rooms, I was surprised to find Executive Chef/ Co-Inn Manager Creighton Smith as his meals compare to Caesars Palace in Las Vegas!

Tonight Chef Creighton prepared one of his versions of Steak Diane, Tornados of Beef, grilled with a demi glaze of Poupon Mustard, shallots, cream and wild mushroom sauce. This is an unbelievable menu for a wilderness area!
Chef Creighton was careful to prepare the meals exactly as each guest wanted along with any special dietary/ health requests. Some of his other meals include recipes for fish, leg of lamb, chicken, steak and more. Each meal is delightfully different!
Chef Creighton explained, “Our culture here on the ranch is comfort ranch food, with big portions because our guests participate in a lot of activities. I have been making people happy for 35 years by cooking great food! I let the food do the talking and the guests define the Ranch!”
There are many types of apples around Mendocino and Creighton bought several different local varieties and then blended the apples. His Crisps are served in individual pans hot from the stove. This one-of-a-kind Crumble Apple Crisp was complimented with house-made vanilla bean ice cream.
