“The Thrills of Tasting Chef Luciano Sautto’s Cuisine”

I was invited for an exclusive “first look” and “menu tasting” at Clique Hospitality’s Salute Trattoria Italiana by Luciano Sautto in the Red Rock Resort. After my dining experience, I can sincerely say, “Salute will quickly be placed among Las Vegas’ finest restaurants.”
With the remarkable culinary talents of Naples born Executive Chef Luciano Sautto, the VIP Tmedia tasting menu offered 14 different courses served family-style. What a feast!
Looking at the Antipasti- the Crispy Zucchini Flowers, Crispy Arancini Balls, Pizza All’ Acqua and Eggplant Parmesan- Chef Luciano began the meal by providing a great mix of flavors.
The chef prepared the Zucchini with their flowers, Ricotta cow’s milk cheese, Amaretti (Italian almond flavored liquor), honey and lemon zest. The zucchini is lightly breaded then pan-fried with pesto.
The crunchy coating awakens to the cheese’s creamy softness and sweeter tastes of the flowers. Crispy Zucchini Flowers, a perfect stuffed finger food or snack, are found at Farmer’s Markets.
The Crispy Arancini Balls, one of Chef Luciano’s family recipes, are stuffed with Bolognese meat-based sauce as well as Fontinella and Ricotta cheese. Imagine all of these flavors in each ball!
The Pizza All’ Acqua are served on their own short, mini-table. Known for having light, thin crusts, they are prepared with very little yeast and the dough is braised for 72 hours. Chef Luciano uses the Italian San Marzano tomatoes, shallots, garlic, basil and chili to make his sauce.
The famous Italian classic Eggplant Parmesan could be dinner or an Antipasti. Chef Luciano uses garlic, shallots, Italian San Marzano tomato sauce and finishes in the wood burning oven.
The next courses, the Crudo (raw) selections included Hamachi Tartare and Albacore Crudo. The Hamachi Tartare includes pear, hazelnuts, and fennel, cut into small pieces and served cold. The Hamachi fish is usually used in sushi.
The Albacore Crudo is sliced thin and mixed with avocado, Calabrian chili and orange. These two recipes are refreshing, light and tasty.
With so many more delicious courses, I have to rave about Salute Trattoria Italiana and this review will be continued.
