I interviewed Johnny Seo, Sushi Roku’s General Manager, during their new spring menu tasting party.
Johnny Seo explained, “Many restaurants offer fusion-style meals but Sushi Roku serves contemporary Japanese cuisine and fusion dishes. This is the real Japanese touch, you will not be overwhelmed.
Tonight we are serving sliced yellowtail sashimi with diced chilies. Garlic is brushed on top of the sashimi. Garlic Ponzu sauce (Japanese citrus vinegar), Yuzu sauce (Japanese citrus) and Soy sauce are drizzled over the fish. The chef takes hot olive oil and gives it a quick sizzle to incorporate all these flavors and open up the fish. The yellowtail is sliced thinly and fanned across the plate.”
With three sauces, spices, garlic, red and green jalapeno chilies, the sashimi has all those flavors and is colorful.”
Three sauces in one dish! Sauces are what really make the meal special and Sushi Roku prepares different sauces for each dish.
Johnny Seo commented on one of their specialties, “Katana Rolls are the must popular. The ingredients are spicy tuna and shrimp tempura topped with tuna and yellowtail with spicy mayo on top.”
One of my favorites is Caesars Salad but have never tasted the Asian version.
All the exciting flavors of Caesars dressing are joined with Soy Wasabi dressing in their Scottish Salmon “Caesar” Salad. The result is sensational! Shaved Parmesan croutons add to the taste treat.
The menu includes grilled entrees like their Chilean sea bass is grilled, then finished in the oven and served on a bed of sautéed spinach.
Johnny Seo described more of their recipes. “Our lobster Tempura is prepared with Saki, sugar and topped with a sweet Miso glaze. Saki is one of the most important ingredients in Japanese cooking and in Japanese cuisine.
Sushi Roku’s chefs choose recipes from all around Japan.”
Sushi Roku offers 21 traditional sushi and sashimi selections of 2, 4, 6 or 8 pieces and 18 signature and other rolls.
Soups, Japanese salads and desserts are also on the menu.
Couples, families, friends and groups can each order a different dish and have their own tasting party.
