“Salute Trattoria Italiana is Very Italian”

Eating at Clique Hospitality’s Salute Trattoria Italiana by Luciano Sautto is as though you entered a Trattoria in an Italian village. As Executive Chef Luciano explained, “My food is authentic, I follow my grandmother’s recipes.”
I am continuing to describe their “Menu Tasting” party.
The Salute Signature Fettuccini Pasta always became a hit when Maître d’ Enrico Sautto, the brother of Chef Luciano, prepared the pasta tableside. Enrico flambéed the 50 Blue Ultra Premium Vodka sauce with a small blow torch as he mixed the Mozzarella Cheese, Basel and cream. Enrico used an ancient-style Parmesan Wheel. Every Parmigiano Cheese Wheel is made according to the same regulations and the same traditional methods, chefs can count on high quality regardless of which wheel their wedge happened to be cut from.
Another interesting pasta, Pappardelle Alle Bolognese was prepared with veal, Pancetta and red wine. Pappardelle is a broad flat ribbon pasta.
Their Gnocchi “Alla Sorentina” (Sorrento-Style), prepared with Italian San Marzano tomatoes and blistered tomatoes as well as aged Parmesan.
The entrees arrived, classic Italian cuisine- Chicken Piccata with a delicate lemon sauce, capers and rocket.
Chef Luciano prepared his classic Veal (veal cutlet) Milanese “Saltimbocca” with Fontina Cheese and smoked Prosciutto.
The grilled Snapper looked so distinguished raised up on the plate with marinated tomatoes and Romansco Sauce.
Biting into the mega-12 ounce Meat Ball was delightful tasting the Ricotta Cheese combined with basil and the meat. The Tomato gravy was the finishing touch.
Luciano’s Signature Gelato & Amaretti (Almond-flavored Italian liquor) Cones Dessert was a hit. The cone sat pm the table suspended by a small stand. What a combination Italian Gelato and Italian liquor, a tasty, light Italian dessert.
Our 14 course dinner continued for three wonderful hours, an evening of fine dining, relaxing and conversation.
It’s the aged Parmesan Cheese, Italian-style tomatoes, family recipes, all of those other extras and little touches that matter at Salute Trattoria Italiana, they truly make the difference.

When you visit Salute Trattoria Italiana, take time to walk around the 4,000 square foot, imported Italian marble dining room to see the open Display Kitchen, bar and Antipasto section. Their banquet room has a door to the terrace and a view of the multiple waterfalls.
