“Grimaldi Celebrated Their New Menu”

I received Grimaldi’s Pizzeria invitation to an exclusive, intimate evening of dining and cocktails to sample their new menu. The event sounded great because the new menu offered creative, one-of-a-kind selections.
Usually restaurants pair wine with the meals but Grimaldi’s paired perfectly prepared cocktails with their new menu only available in Las Vegas.
We had the opportunity to watch pizza making in the open kitchen and took a tour of the restaurant.
I interviewed Brad Whitehead, Grimaldi’s Area Manager commenting on the dining room’s sparkling chandeliers which created a beautiful setting for serving pizzas.
Brad: “The guests love seeing our wine bottle chandeliers when they walk in. We have a beautiful location at the Palazzo Resort overlooking the strip.
Our new pizzas are more traditional like the Margherita and we have some unique names for the others.”
SZ: “That Meat Lover’s pizza has a lot of meat?”
Brad: “A lot of meat.”
SZ: “If you want pizza and you want meat that is the one.
Everything here is different. I like salads and if someone is on a health diet this would be a good selection. You included everything on the house salad, it is big!”
Brad: “We offered the Grimaldi tossed salad forever. It is a great salad, we prep our lettuce every day and buy the best products we can find.”
SZ: “The salad is prepared with Romaine lettuce, red onion, cherry tomatoes, oven roasted sweet red peppers, mushrooms, green olives and vinaigrette dressing.”
Brad: “The salad is paired with the Brooklyn Bramble prepared with Tanqueray gin Crème de Mure blackberry liqueur and fresh lemon juice, very unique.”
SZ: “Your Margherita pizza is paired with the SoHo Shanty.” Brad: “The SoHo Shanty has Peroni, Tanqueray gin, lemonade, fresh lime juice and Monin wildberry syrup.”
SZ: “Sounds as though you would enjoy several different tastes.
Next is the Brooklyn Bridge. We are in Las Vegas, why do you choose names from Brooklyn?”
Brad: “Grimaldi’s original pizzeria was located under the Brooklyn Bridge. The Brooklyn Bridge pizza has oven roasted red peppers, creamy Ricotta cheese and hand pinched Italian sausage atop our traditional pizza.
This pairing goes with the Staten Island Sour- Captain Morgan spiced rum, fresh lemon juice and finished with a splash of Grimaldi’s house red wine.”
SZ: “Everything and wine too!”
Brad: “We hired a mixologist to create these cocktails.”
Brad: “The Garden pizza is topped with fresh tomatoes, sliced onion, mushrooms and black olives and is paired with the Madison Square Margarita cocktail with Maestro Dobel Diamante tequila, Amaretto Disaronno and fresh lemon juice.” SZ: “The finale, the New York cheesecake paired with the Long Island Limoncello Martini are delightful for dessert. Still in New York.”
Brad: “We are known for our pizzas but everyone who tries the cheesecake really loves them. They are made in-house, not many restaurants make cheesecake in house.
The Long Island Limoncello Martini is prepared with Smirnoff citrus vodka, Pallini Limoncello and fresh lemon juice.”
